Starting a Food Business
Many first-time food entrepreneurs treat packaging as an afterthought — something to decide once the recipe is perfect. But the package is part of the product. It decides how long your food lasts, whether it survives the trip to the shop, how it looks on a shelf next to competitors, and whether it meets the law. Choosing well early saves you from expensive mistakes later.
Packaging has one main job: protection
Before it is a marketing surface, packaging is a barrier.
It protects your product from four things that ruin food: moisture, oxygen, light, and physical damage. Different products are vulnerable to different threats. A crunchy snack fails when moisture gets in; an oil or a fried product goes rancid when oxygen and light reach it; a delicate item is destroyed by rough handling. Match the barrier to the threat your product actually faces.
Match the material to the product
- Glass jars & bottles: excellent barrier, reusable, premium look — but heavy, breakable, and costly to ship.
- PET plastic bottles: light and shatterproof, good for drinks and sauces; a moderate oxygen barrier.
- Laminated pouches & sachets: layers of film and foil give a high barrier at low weight — ideal for powders, snacks, and single-serve products.
- Simple plastic bags: cheap but low barrier; fine for fast-selling dry goods, poor for anything sensitive to moisture or oxygen.
The package is also a legal document
Your label is not just design — it has to carry the information the law requires: product name, ingredients, net weight, producer, dates, and more. In Cambodia, prepackaged food must be registered and labelled according to national standards before it can be sold. Leave enough clear space on your design for a compliant label in Khmer, and confirm the current rules with the authorities before you print thousands of packages.
The seal is the part that fails
Producers spend a long time choosing a material and almost no time on the closure, yet the closure is where most packaging problems begin. A jar with an excellent glass barrier and a lid that does not seat properly performs worse than a modest pouch that is sealed correctly. The barrier is only as good as the weakest path into the package.
- Heat-sealed pouches fail when the sealing bar is too cool, the dwell time is too short, or product splashes into the seal area. A contaminated seal looks closed and is not.
- Screw caps fail when the thread is overtightened and deforms the liner, or when the jar rim is chipped or sticky with product.
- Induction seals need the right foil for the container material and a clean, dry rim to bond to.
Test your seals rather than assuming them. Pull a few packs from each batch and try to open them by hand, press them firmly, or stand a sealed pouch upside down on a paper towel for a few minutes. These are crude checks, but they catch the batch where the sealer drifted out of adjustment — which is exactly the batch you do not want reaching a customer.
Packaging that has to survive the journey
A package is not judged on the day it is filled. It is judged after it has been stacked on a pallet, carried on a motorbike, left in a hot delivery van, and put on a shelf near a window. Warm, humid conditions are harder on packaging than the temperate conditions most technical specifications assume.
- Heat softens some plastics and weakens some adhesives. A label that stays put in an air-conditioned room can peel in a hot warehouse.
- Humidity attacks paper and card. Cartons lose stacking strength as they take up moisture, which is how a stable pallet becomes a leaning one.
- Sunlight fades printing and degrades light-sensitive products such as oils and anything containing natural colours.
- Vibration in transport abrades surfaces and loosens closures that were tight when they left you.
You can test this cheaply. Keep a few packs from a batch in the least favourable place you can find — a hot storeroom rather than a cool office — and open them at intervals alongside packs kept in good conditions. The difference tells you what your product will look like at the far end of a real distribution chain rather than an ideal one.
Cost, minimum orders and the trap of committing early
Packaging decisions bind you for longer than most other decisions a small producer makes. Custom-printed material is usually sold in large minimum quantities, so a design mistake is not a small loss — it is a cupboard full of unusable stock and a delayed launch.
- Start with plain stock containers and a printed or applied label. Changing a label is cheap; changing a printed pouch is not.
- Count the whole cost, not the unit price. Carton, label, closure, tape, freight and the breakage rate all belong in the number. Glass often loses to a pouch once breakage and freight are included, and sometimes still wins on shelf appeal.
- Check that your filling method and your container agree. A narrow neck that is awkward to fill by hand will cost you time on every batch you ever make.
- Confirm the material is intended for food contact and ask your supplier for documentation. Do not reuse containers that previously held something else.
The short version
Packaging protects your product, sells it, and keeps it legal. Decide what your food needs protecting from, match the material and barrier to that need and to your shelf-life, and design the label around the legal requirements from the start — not after the first print run.
